Oil quality was further investigated by determining specificextinction coefficients at 232 and 270 nm. K232significantlyincreased as a function of harvest date between April and June(Table 1). Such an increase indicates the occurrence of significantoxidative processes impacting the unsaturated fatty acid chainscontained in kernels. The decrease of K232observed for the Arganoil solvent extracted from fruits collected in July can be explainedby the formation, during ripening, of secondary oxidation products,and hence the disappearance of some primary oxidation products.
