The convective heat and mass transfer coefficients of minor fish species like prawn (invertebrates) and chelwa (vertebrates) have been determined under sun drying condition at different drying times and moisture contents. Convective heat and mass transfer coefficient was a function of moisture removal, physical properties of moist air, operating temperature and surface area. The values of convective heat and mass transfer coefficient varied significantly with the type of fish. This was mainly because of porosity, shape, size and initial moisture content of the fish.
