Determination of biogenic amines (BAs) in smoked pork meat sausages
Extraction and determination of BAs were carried out according to the procedures described by Bartkiene, Juodeikiene, Vidmantiene, Viskelis, and Urbonaviciene (2011). Biogenic amines (BAs) were analysed in the outer layers (4 mm thick) and in the centre of the sausages.
