During
each evaluation session, panelists evaluated between 12 and 17
wine samples (10 mL), each assigned a 3-digit code. In order to prevent
fatigue, panelists rested for 40 min at the midpoint of each
session. Additionally, panelists were required to wait at least two
min between each evaluation. Panelists were advised to expectorate
the samples. Each session lasted approximately two hours,
including the forced 40 min break.
