3.2.1. Surface colour
The surface colour stability is depicted in Fig. 1. The initial (day 0) values for all the CIE L∗a∗b∗, hue and chroma values differed between the treatments. This is due to the ±40 min transport period required to get the samples from the packaging plant to the laboratory, which allowed sufficient time for the gases and meat constituents to react, thus causing the colour variations between the treatments.
