3.2.5. Thiobarbituric acid reactive substances (TBARS)
Initial TBARS values ranged from 22.98 (control) to 15.67 (2% CSP) mmol malondialdehyde MDA/kg muscle (Fig. 2). As secondary oxidation products, they accumulate and, as expected, TBARS increased along all the storage time evaluated.There were significant differences between control and samples containing CSP from day 0, which could be due to the antioxidant effect of CSP (Bastida et al., 2009). Over storage, a concentration-dependent antioxidant effect of CSP in mackerel minced muscle was observed. This parameter has shown to be a good index of sensory rancidity in seafood (Sanchez-Alonso et al., 2008 ).
