The osmotic pressure of a tomato peel fiber solution was measured as an indicator of potential problems associated with diarrhea after the intake of the fiber. Data measured in water was very low, whereas the osmolarity of the sample in a physiological solution of ClNa was 313 mosM/kg. This is similar to the internal physiological values (302 mosM/kg), showing a significant correlation with the WRC (r= 0.99, p= 0.043). For this reason, we can assume that tomato fiber
has WRC water but cannot capture water from the internal environment of the organism by itself, avoiding diarrhea problems (López,1995)
