Application of fertilizers or organic substances for growing rice
crop has profound effect on its milled rice, flour and starch properties. Rice produced by CM after milling had higher protein
content, hunter color L value, cooking time, gruel solid loss and
hardness. Starch isolated from both the milled rice also showed
significant (P < 0.05) variations in its properties with that from CM
farming exhibiting a lower amylose content, pasting properties but
higher swelling power and solubility in comparison to its counterpart
OM starch. Both the starches showed typical A-type X-ray
diffraction pattern and similar polyhedral shaped starch granules.
