Thank you for your e-mail. Your question about cooking rice in a DLT-80 was earth shattering. We have sold Crown literally a thousand kettles throughout Asia for the specific purpose of cooking rice and never asked how rice is cooked. Amazing but true!
All kettles can cook rice: direct steam (DLT-80), gas or electric. The only recommendation I have is that the DLT-80 direct steam kettle is supplied standard with a 35psi operating pressure.
To speed up the heating process I recommend that you upgrade to 50psi, add a spring assist cover, add a 2” draw-off valve, add a single or double faucet and consider adding litre etched markings on the kettle.
While this e-mail still does not answer the question as to how to cook rice, I can only suggest you ask a chef at a major 5 star hotel for guidance.
According to my discussions with Crown, cooking rice depends on the quality of rice being cooked and the amount of water added to the kettle to arrive at the texture you consumer requires.
