This could be attributed to pectinase, which may have acted on pectin, releasing
some galacturonic acid units. Although significantly different
from each other, both the retentate and the clarified fractions showed
acidity values similar to the feed juice, indicating that the membrane
did not markedly affect this component. Regarding the soluble solids
content, a slight variation between samples was observed, being
more pronounced for the total solid values.
