Cellulase and pectinase hydrolyse pectin and cellulose respectively
in the plant cell walls and increase extraction efficiency.
Pectinolytic and cellulolytic enzymes have been used to increase
the juice yield during pressing and straining of the fruit juice
extraction (Al-Hooti et al., 2002; Landbo, Kaack, & Meyer, 2007).
The effect of cellulase, pectinase and pectinase/cellulase mixture
at different levels and extraction times ranging from 20 min to
300 min on the soluble solids yield and on the turbidity was shown
for only Deglet Nour cultivars.
