After extrusion extrudates were dried at 80 °C for 10 min in
a convection oven, then cooled to room temperature and packed
in polyethylene bags. To prepare an instant porridge, an extrudate
was ground using the comminutor and passed through a 2-mm
sieve. Dried instant legume-rice porridge powder was packed in
aluminum-foil laminated polyethylene bags until further analysis.
