Preliminary study using various commercial polysaccharide degrading enzymes revealed that the multi-enzyme showed higher potential on viscosity reduction (based on mg protein) compared with a commercial cellulase/β-glucanase with lacked pectinase activity, suggesting cooperative effects of different glycosyl hydrolases on viscosity reduction. The result provides a basis for further induction of the target activities in the fungal enzyme preparation and formulation of a viscosity-reducing multi-enzyme with higher efficiency.
