Vegan no-Bake Chocolate Coconut Protein Cookiesnts
¼ cup coconut oil
¼ cup maple syrup
¼ cup natural peanut butter (or nut butter of choice)
¼ tsp sea salt
¼ cup Vega Performance Protein in Chocolate
1 cup unsweetened fine coconut
½ cup quick oats
¼ cup choice of add-in: try dairy-free chocolate chips, raisins or chopped nuts
Instructions
Melt the coconut oil, maple syrup, peanut butter, sea salt and protein together in a small sauce pan until it's completely melted and smooth.
Mix the coconut, oats and your choice of add-in together in a bowl.
Pour the melted protein mixture over the coconut and oats and mix well.
Drop by spoonfuls onto a parchment or wax-paper lined baking sheet. You may need to press each cookie together slightly so it stays together.
Place in the fridge until hardened.
Makes approximately 12-14 cookies.
Store in the fridge.
