To our best knowledge, this study is the first to demonstrate that RES
can serve as an effective feed additive that can beneficially improve pork
meat quality. In addition, this study also provides the first evidence in
pigs that RES induces a shift toward more oxidative muscle fibers and
increases antioxidative capacity, while decreasing myofiber CSA and
muscle lipid oxidation, which may serve as valuable information for
understanding the underlying mechanisms of high meat quality in
response to RES treatment.
