(p < 0.05) from sucrose, aspartame had higher average scores as
compared to sucrose. This enhancement of the aspartame was
observed by Cloninger and Baldwin (1974) in certain ingredients
such as gums, gelatin and orange-flavored noncarbonated
beverage. The highest overall linking found in passion fruit juice
sweetened with aspartame can be due to this sweetener had a
significantly higher intensity of fruit-flavor than the other sweeteners
evaluated (Cloninger & Baldwin, 1974). Similar result was also
reported by Cavallini and Bollini (2005) in mango juices, once
despite the sample sweetened with sucrose had a higher intensity
of fruit flavor, aspartame elicited significantly longer persistence of
fruitiness, suggesting an intensification effect on fruitiness of
mango juice. In addition, aspartame is generally more potent in
products at room temperature than in frozen or hot foods (Candido
& Campos, 1996), and all samples of this study were presented at
room temperature.
