In infants, food intake is thought to be mainly regulated by internal signals. Later in life, as internal signals seem to become less prominent, external signals are thought to play a more dominant role.
As already mentioned, besides the intrinsic sensory properties of a food and the sensory capabilities of individuals, there are several other factors that contribute to human food perception, liking and intake .
The enormous variation across individual seniors and our limited understanding of possible mediating and modulating factors call for more research. To this end, we now briefly reflect on several modulators of human eating behaviour that have received considerable research attention in sensory science over the last 10 years.
