The use of a silver-plated copper wire guarantees the reductionof measurement errors that could appear due to polarizationeffects on the surfaces of the electrodes (Barsoukov and RossMacdonald, 2005). The frame with the electrodes was placed in apolycarbonate disc (Fig. 2), in order to maintain the steady positionof the sensor during the measurements. The sensor was immersedin a sample of the tested material to the 36 mm depth. The inves-tigated samples consisted of 100 ml of honey placed in a plasticcontainer.
