Up to now, many polysaccharide fractions from edible mushrooms are isolated, purified and structure iden-tified [4–6]. On the whole, polysaccharides come from differentedible mushrooms have different structure and biological activ-ity. Most of polysaccharides from edible mushrooms are -linkedglucans and the biological activity of which is closely related to itsstructure and chain conformation [5,6]. It was reported that theantitumor activity of schizophyllan was related to the proportionof triple helices [5]. The studied of relationship between antitumoractivity and chain conformation in lentinan suggested that lentinanwith single flexible chains showed far lower antitumor activities∗Corresponding author. Thus, it is necessary and impor-tant to study the structure and activity of polysaccharides fromdifferent edible mushrooms.
