2.3.3. Thermal treatment (TT)
A tubular stainless-steel heat exchanger coil immersed in a
hot water shaking bath was used to treat beverages by heat
(University of Lleida, Lleida, Spain). The flow rate of beverages
was maintained through a gear pump. Beverages were
thermally treated at 90 °C for 60 s. After heating, the beverages
were immediately cooled down to 5 ± 1 °C in an icewater
bath.
