In this study, experiments were conducted to characterize the influence of parameters governing the emulsion step, and since the complex coacervation between chitosan and gum Arabic is few reported in the literature, the purpose of this research is to explore the mechanism based on a thermodynamical approach and to investigate the effect of biopolymer ratio and cross-linker amount on the microcapsules properties using Fourier transform infrared spectroscopy (FTIR), and scanning electron microscopy (SEM).
