Forty-six headspace volatiles were identified in infusions prepared
from lemon basil; results are presented in Tables 1 and 2.
The volatiles were dominated by terpenes; hydrocarbons and oxygenated
compounds. Forty of these compounds have not been reported
previously in lemon basil. The volatile constituents of
fresh leaves obtained from lemon basil during the three stages of
