After the QDA test was performed, two best ice
creams formulation of sample VCO 8 and VCO 12
were chosen for further investigation in consumer
affective test. Selection of better formulations is mainly
based on texture attributes such as smoothness and
firmness in QDA analysis. Both VCO 12 and VCO 8
appeared to have smoother and softer texture ascompared to control. However, sensory attributes such
as color, sweetness, creaminess were taken into consideration
as well. Even though VCO 4 has same scores in
firmness, creaminess, smoothness and sweetness as compared
to VCO 8 and VCO 12, but VCO 12 was chosen
instead of VCO4. This is due to their color and coconut
oil content. VCO 12 has more attractive and lighter
color. Besides that, by judging from the coconut oil content,
VCO 12 is expected to have richer coconut flavor
which is a pleasant flavor to consumer as compared to
VCO 8 and VCO 4.
