3. Results and discussion
3.1. Experiment 1: cooler shrink
The hot carcasses had 260.09± 34.84 kg of mean weight, 53% were
classified as fat absent, 40% as fat scarce and 7% as average fat cover.
The mean temperature of the first chilling stage (first 24 h) was 3.37 ±1.71 °C, and the mean airflow rate
was 1.41 ± 0.37 m/s. The mean temperature in the second stage (24 to 96 h) was 1.46 ± 1.26 °C, and
the mean airflow rate was 0.61 ± 0.03 m/s.
