2.2. Analysis of banana peel
Moisture content was determined in separate portions of the
freshly removed peels. The sample was then dried at 80 C and
ground for analysis. Triplicate samples of dried banana peel were
analyzed for carbohydrate, crude protein, crude fat, crude fiber
and total ash contents following the methods of Clarke et al.
(2008), Essien et al. (2005) and Horwitz (1980).
