2 tbsp shrimp paste
2 tbsp granylated white sugar
3 tbsp crushed fresh pineapple
2 birds eye chillies, finely chopped
1 tbsp finely chopped lemongrass
1 large clove garlic, finely chopped
1/4 cup boiling water
In a bowl, mix shrimp paste and sugar to form a paste, then mix in pineapple, chilli, limongrass and garlic, working to a puree with the back of a spoon. Add boiling water, a little at a time, stirring to a combine until a dipping sauce consistency froms. Trato a serving bowl, stir to mix well, then serve.
