Conclusions
Pomegranate, sudachi and mangosteen exhibit higher antiglycation
activity in HSA and collagen than other fruits, and
pomegranate and mangosteen peels displayed greater antiglycation
activity than aminoguanidine. Citrus fruits (lime,
lemon, and yuzu), two berries (strawberry and blueberry), and
several apple varieties (“alps otome”, “sekai ichi”, and “san
jonagold”) also displayed high anti-glycation activity.
