2.2. Moisture sorption isotherms
The absorption and desorption curves of fresh unripe banana were obtained with a Vapor Sorption Analyzer . The method chosen was the Dynamic Dewpoint (DDI) with airflow rate of 200 mL /min .Before the measurements, the unripe bananas were peeled and cut into cylindrical slices(5 mm approx.) and grated.Approximately 2 g of banana sample were dried in an open oven at 40 C for an interval of 45 min or until the material achieved a water activity of 0.90.
