3.2.3. Free amino groups
The free amino groups of cuttlefish skin gelatin gels with 1%
EKWE or ECBE oxygenated at various pHs are shown in
Table 1. Gelatin gels with the oxygenated extracts had fewer
free amino groups than the control gelatin (po0.05). The
greater decrease in free amino groups of gelatin gels was
observed when both extracts oxygenated at higher pH were
used (po0.05).
