The third dimension of the PCA, which explained 7.77% of the variance, sorted samples according to their prebiotic ingredient. Samples formulated with inulin tended to be located at positive values of the third dimension, while samples formulated with frutooligosaccharide were located at negative values of the third dimension (Fig. 1 (b)). Samples with inulin mainly differed with those formulated with FOS in their thickness and roughness.
