Sulfites had been accepted as a safe additive (generally recognized
as safe) until its allergenic reaction was observed in sensitive
people. Usage of sulfites in normal conditions is not a problem for
consumers because it has no teratogenic, mutagenic and carcinogenic
effects (Grotheer, Marshall, & Simonne, 2008). However, if it
is used more than the permitted levels, it can be allergenic (asthma)
for some sulfite-sensitive people. It can cause reactions like nettle
rash, angio-neurotic edema and anaphylactic shock in ordinary
individuals (Erkan et al., 2007). Therefore, consumers tend to avoid
metabisulfite for its allergenic effect.
