-Carrageenan (KC) is extracted from red seaweeds [17].
It is an unbranched negatively charged hydrophilic polysaccharide
with the repeating unit of disaccharide sequences of
4-sulfate esters of -1,3-linked D-galactose and -1,4-linked 3,6-
d-anhydrogalactose. KC differs from - and -carrageenan in the
content and position of sulfate groups and the content of the
3,6-anhydrogalactose residue. For the protein/carrageenan complexation,
sulfate groups on carrageenan play a decisive role, and
thus -carrageenan was found to have higher binding constant than
KC [18].
