Pullulan films with an addition of water S. hortensis extract demonstrated strong antibacterial properties, and therefore this extract was used in the subsequent part of the research for preparation of microbiologically active pullulan-based coatings. Peppers and apples, which had previously been contaminated with A. niger mold spores and S. aureus bacterial cells, were coated with pullulan coating and coated with pullulan with an addition of 20% SH extract. Peppers and apples were selected as the model materials due to the high availability and high consumption of thesefruit worldwide.
