In addition, acrylamide is
present in high concentrations in several highly popular and of high
consumption foods. Thus, acrylamide monitoring and mitigation
are issues of major relevance (Rosén and Hellenäs, 2002). The
analytical methods for acrylamide determination are based on (i)
gas chromatography and mass spectrometry -GCeMS- (Tareke
et al., 2002) or (ii) liquid chromatography and tandem mass spectrometry
-LCeMSeMS- (Rosén and Hellenäs, 2002).
