Greater than 90% of the protein remained in the WPI 2 samples, while that retained in WPI 1 protein was lower, ranging from 64.3 to 88.8%. When the SA and native WPI 1 were thermally treated in 30 mM NaCl, the percent protein remaining was reduced to 74.7 and 64.3%, respectively, indicating up to 35.7% aggregates with greater than 0.45 mm nominal diameter. From the solubility experiments, it is known that the thermally treated SA are soluble (92.3% total protein solubility) compared to the native WPI sample (67.8% solubility)
