Both TLS and TLS formulation had strong inhibitory effects on bacteria, yeasts and moulds in apple juice. Antibacterial spectrum studies showed that TLS per se had a low inhibitory effect on E. coli and the organic-acid combination had a synergistic effect on TLS.
Therefore, TLS had an excellent inhibition effect on apple juice because the synergy occurred between TLS and organic acids in apple juice, such as malic acid and citric acids
