- Lamb/Beef/Chicken/Pork – Can be portioned but not marinated and cooked
- Mousses – Minced items allowed (preparation need to be made in the competition)
- Sauces – Can be reduced but not finished or seasoned
- Stocks – Can bring into competition
- Dressings – Need to be made in competition
- Coulis – Puree is allowed but need to be finished in competition
