In the case of carrots, Selma et al. (2008) found that inactivation
of mesophiles and total coliforms in wash water from carrots using
ozone (80 mg/min) was about 4 and 1 log-reduction, respectively,
after 20 min of treatment. Ozone is responsible for the oxidation of
lipids on the cells; it acts on the unsaturated lipids of the cell
membrane, and in the lipopolysaccharides coat of gram-negative
bacteria, enzymes and genetic material, promoting the death of
the microorganism (Kim et al., 2003).
