The aims of this study were: a) to evaluate the antifungal activity of LAB cell-free supernatant (CFS) against A. parasiticus and Penicillium expansum;
b) to determine the inhibition of fungal
growth and estimate the shelf-life of breads fermented with yeast and LAB and
c) to analyse the reduction of AFs content in bread inoculated with A. parasiticus.
