Fresh white mulberries (M. alba L.) were obtained from Istanbul, harvested by hand and kept in a refrigerator at 4 _C (_24 h) before pretreatment and drying. Berries of uniform in size were used. The weight of the sample size (consisting of 10 berries having an average berry diameter 1.68 cm) was kept at 4.90 g. The moisture contents of the fresh and dried mulberries were obtained by the Association of Official Analytical Chemists, method no. 934.06, (AOAC, 1990). The initial moisture content was close to 81.5% (wet basis). Chemicals used for dipping were technical grade.
