Sprout is categorized as a healthy vegetable. It can be consumed both fresh and cooked. The storage temperature is the important factor to preserve the taste and nutrition of sprouts. This research was to study the effects of storage temperature of sunflower sprouts Aguara Atuel and Pioneer Jumbo varieties on the nutrition at contents (Chlorophyll, Vitamin C and Fiber). The 5 days after planting sunflower sprouts lighting for 12 hours were harvested and then storage in 8, 10 and 25 °c for 5 days. The results showed that, the appropriate temperature to storage sunflower sprouts of both varieties were 8 and 10 °c as its maintained the Chlorophyll, Vitamin C and Fiber contents for 4 days that higher than the 25 °c treatment.
