The correct application of cleaning agents is essential for the control
of biofilms in dairy plants, depending on factors such as efficacy, safety
and easy removal after application. It also has to consider the corrosive
characteristic of these agents and the occurrence of sensory effects in
the products obtained after their application and removal (Simões et
al., 2010). In dairy plants, sodium hydroxide (NaOH) is commonly
used as caustic agent and nitric acid (HNO3) as acid detergent, combined
with other detergents.
