The acceptable limits, specifically for RTE raw fish like sashimi
meals, are not well established. However, some information about
RTE food has been indicated
which allows us to achieve some pathogenic and spoilage indicators. The Commission Regulation
(EC) N 1441/2007 refers to the legal limits of pathogenic bacteria in RTE foods, such as L. monocytogenes, but does not give
specific limits for RTE raw fish.
