Solubility. The effect of different inlet temperatures on solubility is shown in Table 4. At the highest temperature (160 °C), sample E showed the highest solubility (99.67%), whereas at the lowest temper- ature (140 °C), sample A showed the lowest solubility (87.67%). The re- sults indicated that the solubility of powders increased with increasing inlet temperatures. The same trend was reported by Phoungchandang and Sertwasana [35] for spray-dried ginger juice, and by Izidoro et al. [36] for spray-dried green banana starch. As the carrier agent used in the study is maltodextrin, which is an amorphous and noncrystalline material, thus it may lead to higher solubility.
