The rheological measurements of coconut milk samples were carried out using a rotational, concentric cylinder viscometer (Haake, Model VT500, Germany) with NV type measuring system. Shear rate was increased from 0 to 300 s
in 2 min. The temperature of the sample was maintained at 30C during the measurements by means of thermostat bath for controlling the stability of the sample. The experimental data were presented as average of two replicates
