Regarding the total polyphenol content, the analysed cultivars
showed different values: 7280 mg kg1 in Carolea, 7000 mg kg1
in Nocellara del Belice, 6300 mg kg1 in Nocellara Messinese and
5989 mg kg1 in Cassanese olives. It is well known that olive polyphenols,
in particular the oleuropein and its hydrolysis-derived
products, have antimicrobial effects.
