This research of this study was to investigate the changes of bioactive compound of purple rice grass including, Gamma amino butyric acid or GABA , Chlorophyll and Phenolic compounds of germinated and chemical and microbiological changes of storage purple rice grass product and. Results show that GABA content in germinated Hom Nin Rice increase highest in 8 days (1.93 mg/g) and tend to decrease after duration increases. On the other hand, GABA content in germinated black glutinous rice increasingly until 12 day (0.483 mg/g) determined by HPLC technique. A study of storage product at 4 oC, determination with chlorophyll content of the highest product 4 days. On the other hand, total phenolic content and antioxidant activity of the highest product 0 days and tend to decrease after duration increases by comparison at 4 oC, with Gallic acid by Microplate reader. It’s was found statistically significant difference at the level of 0.05. Although the determination of pH value between 5.5 – 8.2 and the total visible count in Hom Nin Rice and black glutinous rice product that is expected to tends to rapidly increasing in 1 and 2 day of storage, respectively.
