In the present study, a total of 125 white grape samples of
Savatiano variety were analyzed. The selection of this particular
sampling variety was made with the intention to represent the
most cultivated wine grape variety, which covers large tracts of
land in Central Greece and particularly in Attica. This variety is well
known for the famous Retsina wine that is labeled with a protected
designation of origin and also for dry wines with an aroma of citrus
fruits and flowers. All the grapes were harvested at the stage of
maturity from vineyards spanning the whole region of Mesogeia
Attica, during the 2013 vintage period. Each grape bunch (500 g)
was taken from plants which were along diagonal transects of the
field to obtain random sampling, placed in sterilized bags and kept
