In order to give some insight into which predictive microbiology
models and parameters could have the most influence on the risk
prediction, the impact of the choice of some published predictive
growth models was evaluated within one simple step of a quantitative
risk assessment of listeriosis from consumption of a product
that permits growth of L. monocytogenes, i.e. contaminated
cold-smoked salmon (CSS). Acknowledging the specificity of
this exercise, we further developed some generalizations for
L. monocytogenes risk assessments.
