2. Materials and methods
Four commercially available SC-based products were used in the
experiment, three from the sugar cane industry (dried yeast - DY,
autolyzed yeast - AY and cell wall - CW) and one form the beer
industry (brewery dehydrated residue - BDR). The number of yeast
cells in the SC-based products was determined in a suspension of
1.0 g of each product in 5 mL of ultrapure water (Milli-Q, Millipore,
Bedford, MA, USA). The suspensions were observed by light microscopy
using a modified Neubauer chamber, showing that the
four SC-based products had 1.0  1010 cells g
